Quick & Easy Pretzel Nuggets

I had a lot of trouble coming up with a recipe for this week’s book “Away in My Airplane“. What food goes with air travel?  My mind went to two places – peanuts and pretzels.  Those of us of a certain age will remember that you used to get little bags of pretzels or peanuts on airplanes.  Do they still do this? I haven’t been on  a plane since my honeymoon 5 years ago, but I don’t remember getting pretzels. We got drinks, but I don’t think we got any food.

So, anyway, I decided we would make pretzels to go with our airplane book.  But, not just any pretzels.  These are super soft and fluffy pretzel nuggets dripping in butter, like the kind you get at the mall.  The best part, they require no yeast, so you don’t have to wait for them to rise. Perfect for impatient children (and their parents).

For this recipe, I used the 2-ingredient dough that’s been blowing up Pinterest and Facebook. Have you seen this, yet?  It’s just self-rising flour and greek yogurt.  You mix them together and you can make just about anything.  So far, I have tried making bagels (bleh), pizza (meh), and biscuits (yum).

These pretzels require a couple extra ingredients to get them tasting right, but too many.  Also, I never have self-rising flour on hand, so I make my own.  It’s really simple.  I will tell you how.

  • mix 1 cup of regular all-purpose flour with 1.5 tsp of baking powder and 1/4 tsp of salt. That’s it. So not worth buying it when you can make it yourself. 

I have no idea if these pretzel nuggets keep well. They never last long enough to tell.  My 3-year-old ate most of them himself.  I may have eaten one or two (or 10).

This dough can also be made into actual pretzel shapes, but the nuggets were easier for my guy to make.  Plus, they were better for snacking on throughout the day.

Let’s get baking.

Ingredients

Quick & Easy Pretzel Nuggets

  • 1 cup self-rising flour (see note above to make your own) +more for dusting and kneading
  • 1 cup plain nonfat Greek yogurt, liquid drained off
  • 1 tbs baking soda
  • 2 cups hot water
  • melted butter
  • kosher or sea salt

Directions

1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

Mix together flour and yogurt. You can do this by hand or use a machine.  I used my food processor. But, a spoon works just as well. I’m just lazy.

2. Turn dough out on floured surface and knead until a smooth-ish ball forms. Dust your hands with flour, too. The dough will be wet and sticky, add a little more flour if necessary.

3. Cut dough into strips. Roll them into long “snakes” and then cut into bite sized pieces.

4. In a shallow bowl, mix the hot water and baking soda.  Quickly dip each nugget into the water and then onto your baking sheet.

5. Bake for approx 15 mins or until a light brown. They won’t get too golden but they should be slightly brown.  Remove from the oven and brush with the melted butter.

Allow to cool slightly and then enjoy.  These are great warm or room temperature.  I left them out on the counter so we could munch on them all day.

      Ewww. There’s nothing worse than a bad cookie. Crimes against cookies should be a punishable offense.
