Baked Chicken Tacos




















Yeah, you knew this was coming.  What else would I make this week?  Banana bread?  Obviously, tacos were a necessity.

I don’t know about you, but reading this book makes me crave tacos. When they go over the perfect taco checklist, I salivate just a little. So, this week, we are making yummy chicken tacos.  This is a pretty basic recipe.  It’s incredibly simple, that I don’t know if it actually qualifies as an actual recipe.  (but, then I’ve seen “recipes” for peanut butter on apples, so who knows)

You will need:

  • Shredded chicken
  • peppers (red or green)
  • onions
  • shredded cheese
  • soft tortillas (I used corn but flour would work, too)
  • any other toppings you can think of

This recipe does require a little advanced prep.  You need shredded chicken.  If you are one of those super organized, meal prepping moms, then you may be good to go.  If you are like me and think of recipes on the fly, then you may need to do this part before you mention making tacos to your little one.  Unless you have the most chill preschooler on the planet, I don’t think they will be too pleased to wait 4-6 hours for the slow cooker to make the chicken before they get started cooking their part. Or maybe you have one of those fancy new instant pot thingies and can do it in minutes.  Yay, you!

You can use any shredded chicken recipe you want (or even leftover chicken from another meal). I simply lined my slow cooker with peppers and onions then put (frozen) chicken breasts on top and a good healthy sprinkling of taco seasoning on top.  Cover and cook on high for 4 hours (or it looks down if you are able to check on it).  Shred the chicken with a fork, then return to slow cooker and add a couple tablespoons of cream cheese to help thicken up the sauce.  I drained a little of the liquid off, too, because I hate soggy chicken.  But, that’s your call.  Heat the oven to 350° and line a baking pan with foil.  Coat lightly with cooking spray.

Once you have your shredded chicken, you are ready to begin building your tacos.  Gather all the ingredients you want to include in your tacos.  You can ask your kids for their input, since they are the ones making and eating them.  I kept it simple and just used peppers, onions, and cheese.  But, you can add any toppings you want.  Guacamole, beans, salsa would all be yummy on these tacos.

Lay your tortillas out on a work surface and allow your child to build the tacos.   Don’t forget to warm up those tortillas before you start or they won’t fold nicely when we go to bake these. Start with a layer of cheese, this will help seal the tacos when cooking and keep them folded.

Then, add the chicken and other toppings. Fold the tacos over and put on the prepared baking pan.  (You could also brown these slightly in a frying pan before putting in the oven, but that is optional.)  Bake until the tortillas are crispy and lightly browned and the cheese in melted.

Enjoy with salsa and sour cream!  Your kids just made dinner!  Now, let’s hope they eat it.

  • Shredded chicken

  1. Preheat oven to 350°. Line a baking pan with foil and coat with cooking spray.
  2. Prepare the shredded chicken using your favorite recipe.
  3. Warm tortillas according to package directions.
  4. Lay tortillas out on work surface. Start with a layer of cheese. Then build your tacos from there using the chicken and all your toppings.
  5. Fold each tortilla in half and place on prepared baking pan. Bake for about 10 mins or until tortillas are lightly brown and crisp.
  6. Enjoy warm with salsa and sour cream.
